Nice shot! I don't know the best technique but if the subject allows I use single point AF and then fine tune with manual focus while holding AF with the shutter. Sometimes my subject is too active so I just fire off multiple shots and hope for the best .

Yeah I switched some things in the auto focus modes and I think I am going to switch them back. I do use single point though!
